Sick Day Smoothie

I hate being sick. I've been stressed out this week. Between a couple of friends' funerals, mom's birthday (first one without her), and having one-too-many maintenance issues at work, I think it hit me. 

I thought I was resilient especially with how good my diet has been lately. But I guess you can't outsmart stress. I know I need to practice good stress management (any tips?), entrust my worries into Jesus' hands, and probably exercise more too. It's just been a tidal wave of a week. 

But anyways, I woke up with a scathing sore throat and overall miserable demeanor. Good thing it's the weekend. I am definitely enjoying the pajamas all day, drinking green tea like crazy.. and water.. and this smoothie. 

This smoothie isn't really the delightful beverage type, but it's good for what it is and I think the color is cute too.

Sick Day Smoothie
Serves: 1 Time: 5 min

Ingredients:
3/4 cup plain yogurt
1-2 tbsp pineapple, crushed
1/2 banana, frozen
3 tbsp coconut milk, unsweetened
1 cup or about a large handful kale, rinsed and patted dry
2 tbsp (or more to taste) beet juice (reserved water from boiled beets), or other vegetable juice of choice

How To:
Place all ingredients in blender and blend until smooth and frothy. Enjoy.. er, get better.
