Coffee with Whipped Chocolate Cream what?!?

A few days ago me and a co-worker visited a local's garden. She hospitably served us coffee and cream before we took the tour around her vegetable garden. As a side thought she was mentioning how she likes to serve whipped cream with coffee, and the first time she served it like that to her partner, she was quite quizzical but instantly loved it.

I came home that day knowing I had saved some chocolate whipped cream (leftover from cream puffs), and it was just waiting for me in the freezer. I brewed up some fresh coffee and dolloped a few scoops of the frozen cream atop my cup. My first sip I knew it was heavenly.

So although super simple and quick, you must try this! Next time you whip up some cream and maybe have leftovers, freeze it and use it for your morning coffee. The cream melts into a chocolately foam, reminiscent of a house mocha.

Whipped Chocolate Cream (with Coffee)
Time: 5 min Serves: 6

4 oz fine chocolate, I used 70 percent cacao
1 cup heavy whipping cream, chilled
1/2 tsp vanilla
1/4 cup powdered sugar (optional)

freshly brewed coffee

How To:
1) In a double boiler (or metal bowl above a saucepan with 2 -3 inches water), heat to medium-low. The bowl should be large enough to divert any steam away from the chocolate (water/steam could give your chocolate a grainy texture). Add chocolate to dry top bowl and whisk until smooth. Only about 3 -4 minutes. Turn off heat. Add 3 tbsp whipping cream and whisk until fully incorporated. Set aside. Don't overwork because it will become grainy.

2) In a chilled aluminum bowl add whipping cream, vanilla, and powdered sugar. Whip until cream becomes fluffy. Methods- hand whip with whisk for 15 minutes; OR use mixer, mix on high for 4 - 5 minutes.

3) Dollop whipped cream into bowl with melted chocolate. Using a spatula, gently fold chocolate into whipped cream until cream is chocolately.

4) Pour coffee into a cup or warmed mug. Dollop about 3 scoops of whipped chocolate cream on top of the fresh coffee. Let melt for a 30 seconds before serving. Enjoy!

My freshly brewed coffee:
I like a strong brew. I even enjoy the grit that comes along with the french press sometimes. Since our french press broke though, we've been doing pour-overs. How I do it. I boil filtered water. In a brew basket or pour basket, place a filter. Fill with 1/4 - 1/3 cup medium-ground coffee. Gently pour the boiling water along the edges of the top of the filter in circular motions. I do this in increments, let the first bit pour through, then repeat with the water. It takes about 3 - 4 minutes. My favorite way to drink coffee lately. I'm no professional, don't even know what the proper measurements should be or ratio of coffee to water, but this is pretty easy from novice-to-novice. Hope you enjoy!
