Strawberry and Spinach Smoothie

With spring upon us, I've been craving more smoothies lately. I love the nutrients you can pack into a smoothie and how refreshing they are. I always experiment, some turning out better than others, some all fruit, some with protein powder, some with added greens.

The best trick for thick and cold smoothies is to nix the ice altogether, and instead replace ice with frozen fruit. If I remember I try to prep some fruit ahead of time, like peeled and halved bananas, and cored strawberries. They thicken the smoothie very nicely and since they are mostly made of water anyways, they act as a superb ice, with way more flavor.

I also use plain yogurt, regular or greek, and the liquid part is usually whatever juice I have on hand. If I'm lucky and have it on hand, I love using Acai juice (so many antioxidants!). One more trick, if you are having trouble with an old blender, add the yogurt and only a portion of your frozen items (strawberries or banana), blend it, then add a bit more, blend again, and repeat. Sometimes old blenders aren't as effective, but this method really works, just take it in stages.

Strawberry and Spinach Smoothie
Time: 5 min Serves: 1 large serving as pictured here, or two medium servings if you're feeling giving
Original Recipe

3/4 cup yogurt
1/4 cup acai juice (up to 1/2 cup if you need more liquid)
splash of orange juice (about 1-2 tbsp)
1/2 frozen banana
5 large frozen strawberries
6 blackberries, rinsed well
2 large spinach leaves, rinsed well

How To:
Add yogurt, juices, banana, half amount of strawberries, berries, and spinach. Blend until well combined. Taste to make sure its going in a good direction.. Add the rest of the strawberries (and more liquid if needed), blend again until smooth and blended.
