Lindsey's Fabulous Lemon Bars

 

Just a quick post on these fabulous Lemon Bars. Since we are moving back to Arizona to help my mom out, I'm gathering some last minute recipes from my current housemate Lindsey. 

These lemon bars are fantastic. Not too sweet, with the perfect balance of lemon zing, and crunchy flakiness of the buttery shortbread. She makes them all the time, and I knew I would start craving them once we were away, so here is her recipe!

Lemon Bars
Total Time: 1 hour Serves: 12
Adapted from Lindsey

Ingredients:
2 cups flour
1/2 tsp salt
1/2 cup powdered sugar
1 cup butter, melted

6 eggs
2 cup sugar
4 tbsp flour
4 tbsp lemon juice
lemon zest, from two lemons
powdered sugar, for sprinkling

How To:
1) Preheat oven to 350ºF.

2) For crust: Mix together flour, salt, powdered sugar, and butter. The mixture will seem crumbly. Using your hands, press the dough into a 9"x12" baking dish until relatively even. Bake for 20 minutes.

3) Make filling: Beat eggs, add sugar, flour, lemon juice, and lemon zest. Pour onto the baked crust. Bake for 20 - 30 minutes or until set and beginning to slightly darken.

4) Remove from oven, let cool. Using a fine mesh sieve, tap the side and sprinkle the lemon bars with powdered sugar. Delicious served warm or cool.
